1/4 cup fresh parsley
1 tsp. lemon zest
1-1/2 tsp. ground cumin
1 tsp. ground coriander
1/2 tsp. pink salt
1/4 tsp. black pepper
1/4 tsp. garlic powder

Note: For an extra crunch or if the mixture is too wet, add some Panco breadcrumbs!

Directions
1. Preheat oven to 400 degrees F. Line baking sheet with parchment paper.
2. In a food processor, combine drained chickpeas, parsley, lemon zest, cumin, coriander, pink salt, black pepper and garlic powder and pulse to combine.
3. Add aquafaba and pulse again so dough sticks together and does not crumble.
4. Scoop out about 2 tablespoons for each falafel and place on prepared baking sheet. Press down lightly with the palm of your hand so they are slightly rounded but not flat.
5. Bake for 20 minutes, flipping once halfway through. It’s done when the firm on the outside, but soft on the middle.

An Interview with...James Temple

James Temple is a Personal Trainer and an Instructor at Fitjoy

WHAT’S YOUR ATTITUDE ABOUT BEING FIT AND HEALTHY?

My attitude to being fit and healthy is simple. I believe we all have to be striving to become the best version of ourselves. Everyone's starting point will be different, focus on yourself and small daily improvements and don't spend too long comparing yourself to others.  Fitness and Health are not a choice, it should be a priority. Sooner or later you will have to make time for it.

WHAT MADE YOU WANT TO WORK IN FITNESS?

I began work in fitness and health simply because I love helping people and feel I can make a difference.

TELL US ABOUT THE CLASSES YOU TEACH AND THEIR BENEFITS?

I teach a wide range of classes from HITT which is awesome for an intense, heart rate raising and fat burning workout to kettlebell training which is great for strength, functional strength and mobility!

WHAT’S YOUR FAVOURITE MANTRA?

My favourite mantra…. Rise and rise again until lambs become lions (never give up)

WHO OR WHAT GIVES YOU INSPIRATION?

Mid afternoon. Herbalife Rebuild strength (post workout shake) Dinner varies… always healthy, always home cooked (I love to cook), often from the sea.

Throughout the day I drink Coffee (good quality) water with aloe and herbal team (Thermo)

WHAT MAKES YOU HAPPY?

What makes me happy…. the sea, animals, beach soccer, family and travel

WHAT’S THE LAST THING YOU WATCHED ON TV?

I don't watch a lot of TV, but one thing I love is Planet Earth One thin
